Here’s how to cook Beef Pares:
1 kg Beef Briskets
2 medium sized Onions (cubed)
4 cloves Garlic (crushed)
1/2 cup Green Onions (chopped)
1/2 cup Brown Sugar
1/2 cup Soy Sauce
1/2 thumb sized Ginger (thinly sliced)
2 Star Anise
1 tbsp. Cornstarch (diluted in 2 tbsp. Water)
Rice Wine (optional)
1. In a pot, pour in a good amount of water. Add in salt, peppercorns, 1 onion, half of the green onions and bay leaves. Add in the beef. Cover and boil until the meat becomes tender. Remove the beef briskets and set aside the broth.
2. In a pan, heat some cooking oil. Sauté onions, garlic and ginger. Add the boiled beef briskets.
3. Pour in some beef broth. Enough to cover the beef. Add the star anise, bay leaves, brown sugar, soy sauce and green onions. Season with salt and pepper. Add rice wine, but it’s optional.
4. Pour in the cornstarch (diluted in 2 tbsp. Water). Cover and let it cook for another 15 minutes or until the beef becomes even more tender.
Ready and Serve!
Note from Delish:
When it comes to beef pares, it depends if you want it saucy or with broth. It depends on you. What’s important is you get that salty, sweet flavor.
