Carrot Fritter

Kids don’t like carrots. Yes. But this carrot fritter is something that you might want to serve for them. The combination of grated carrots, egg and chicken strips makes this recipe delicious that your kid will surely love.

It is very easy to prepare and definitely healthy to munch. A yummy snack that your kids will not notice that they’re actually eating carrots. For less than 30 minutes, you’ll have the fritters ready.

Ingredients:

1 large size carrot
1 cup chicken (shredded)
1 egg
1 medium sized onion (chopped)
2 tablespoon green onions (chopped)
1/2 cup flour
1/4 cup cornstarch
salt
pepper
oil

Process:

1. Peel and grate the carrot.
2. Combine all the ingredients in a bowl. (grated carrot, chicken, onion, green onions)
3. Add the egg.
4. Season with salt and pepper.
5. Mix everything evenly.

Start heating oil in the pan.
1. Scoop about a tablespoon of the mixture to form a patty and fry.
2. Flip to cook the other side. (until golden brown)

additional tips:

Use paper towel to remove remaining oil.
*Best to munch with sweet chili sauce.
