Who would have thought that coke and pork belly go well? This pork liempo recipe can become your favorite. Very easy to prepare and cook. And instead of grilling it with charcoal, we’re going to use an indoor grill pan. Less hassle and easier option.
Here’s how to Cook Coke Liempo:
1kl Pork Belly/Liempo
1 Garlic Head (crushed)
2 Cans Coke
1 tbsp. Paprika Powder
1/2 cup Cornstarch
1 tsp. Peppercorns
- In a pot, add in the pork belly, 2 cans of coke, garlic, paprika powder, peppercorns, and atsuete oil (How to Make Atsuete Oil). Season with salt and pepper. Let boil and cook for about 20 minutes.
- Remove the pork from the pot. Leave the soup.
- Into the soup, pour in about 2 tbsp. of cornstarch diluted in water. Stir. Add more atsuete oil if you want the color of the sauce to intensify.
- Prepare the grill pan. Pan grill the pork while brushing sauce all over.
Note from Ren:
You can add more spices to the sauce like chilies or even sugar if you want it sweet and spicy. But so far this is one easy liempo recipe you can try.
