How to Cook Spicy Pork Adobo

When we say Filipino adobo, there are literally thousands of versions all over the country. We all have our own take on how to make this delicious and all-time favorite recipe. And here’s my own version of spicy pork adobo.

Here’s how to Cook Spicy Pork Adobo:

Ingredients:

1 kg Pork (Adobo Cut)
3/4 cup Soy Sauce
3/4 cup Vinegar
1 tbsp. Chili Flakes
1 tbsp. Chili Powder
1 tsp. Paprika Powder
1 tbsp. Sugar
1 medium-sized Onion (chopped)
6 cloves Garlic (minced)
Bay Leaves
Peppercorns
Salt
Pepper
Cooking Oil
Water

Process:

  1. Pour in some water in a pot. Add in some bay leaves and peppercorns. Then put in the pork. Cook until tender. Remove from the pot and drain excess water.
  2. Heat a pan, pan fry the pork without oil. When they turned light brown on both sides, drizzle a bit of oil. Then make a space at the center of the pan where you can saute the onion and garlic.
  3. Then pour in the vinegar. Cover the pan and let it boil for about 3 minutes.
  4. Pour in the soy sauce, then the chili flakes, chili powder, paprika powder, sugar and season with salt and pepper. All add in the bay leaves and peppercorns. Cover and let it cook and until the liquid is reduced.

Note from Ren:

With my version, I want to boil the pork first. So it’ll remove some fats and all other impurities from it. Also I can be sure that the pork is tender. I also want to reduce the liquid, allowing the pork’s oil to come out.
