Igado

Received a lot of requests to prepare Igado recipe. Igado is an original Ilocano dish which is a combination of pork tenderloin and pork liver. Adding some spices such as bell peppers and bay leaves with soy sauce. So the mix of flavors make it one delicious dish to prepare at any occasion.

Here’s how to cook Igado:

Ingredients:

500g Pork Tenderloin Strips
500g Pork Liver (strips)
4 Bell Peppers (green and red) (strips)
1 medium sized Carrots (strips)
1 big can Green Peas
2 tbsp. Soy Sauce
2 tbsp. Vinegar
Bay Leaves
3/4 cups Water
Salt
Pepper
Cooking Oil

Process:

  1. Heat some oil in a pot, then saute onion and garlic.
  2. Add the pork first. Cook until it starts to change color. Pour in the water. Cover and let it cook for about 10 minutes.
  3. Pour in the vinegar and the soy sauce. Then add the bay leaves, season with salt and pepper.
  4. Add the pork liver, then the carrots, bell peppers and green peas. Cook for another 10 minutes.
