Laswa (Ilonggo Dish)

If you are Ilonggo, you are definitely one of those people who are craving for this. Locally called Laswa, it’s a mixture of all kinds of vegetables. Adding shrimps to it will make even tastier. Very easy and very healthy recipe to prepare especially during this rainy season.

Here’s how to cook Laswa:

Ingredients:

100g Squash (cubed)
100g Shrimps (heads removed)
1 medium sized Eggplant (diagonally cut)
5 pieces Okra (sliced)
10 String Beans (balatong)
1 medium sized Sponge Gourd (patola)
1 small sized unripe Papaya
1 cup Malunggay Leaves
1 cup Saluyot
1 medium sized Onion (quartered)
2 pieces Tomatoes (quartered)
3 cloves Garlic (crushed)
1 thumb sized Ginger
Salt
Pepper
Water

Process:

1. Pour a good amount of water in a pot. Add in the onions, garlic, tomatoes and ginger. Bring to a simmer. Then add in the squash. Bring to a boil.

2. Add in the papaya, okra and string beans. Cover the pot for about 2 minutes. Add the sponge gourd and eggplant. Cover and cook for about 5 minutes.

3. Add the shrimps. Season with salt and pepper. Cover and cook for about 5 minutes.

4. Lastly, add in the saluyot and the malunggay leaves. Cover for about 2 minutes.

Ready and Serve!

Note from Delish:

I grow up eating laswa at home almost every week. I just love the combination of vegetables that’s being added. But I love it with more kalabasa. I even added papaya here, it looks unripe and green in the outside, but as you see, it’s a bit ripe. But it even made the dish delicious for me because it added some sweetness.

This version is what we normally prepare at home. I’m sure some Ilonggos have their own versions too.
