Linutik nga Kalabasa

I’ve received a lot of request to prepare something healthy and delicious. So I decided to share this Linutik nga Kalabasa (Squash in Coconut Milk) recipe. It’s definitely healthy and your kids will surely love. Who doesn’t love squash? This is one guilt-free dish you can prepare. best paired with fried fish and rice.

Here’s how to cook Linutik nga Kalabasa (Squash in Coconut Milk):

Ingredients:

300g Squash
1 cup Coconut Milk
400g Shrimp
1 medium sized Onion (chopped)
4 cloves Garlic (minced)
1/2 thumb sized Ginger (cubed)
1 tsp. Shrimp Paste
1 cup Malunggay Leaves
Salt
Pepper
Canola Oil
Water

Process:

1. Heat some canola oil in a pot. Sauté onions, garlic and ginger. Add the shrimp paste and shrimp. Add about 1/2 cup of water. Cover and cook for about 5 minutes. Remove the shrimps from the pot.

2. Add in the squash. Add more water. Cover and cook until the squash is soft. Add back in the shrimp.

3. Pour in the coconut milk. Season with salt and pepper. Let it simmer.

4. Add the malunggay leaves. Simmer for another 2 minutes.

Ready and Serve!

Note from Delish:

If you grow up in Iloilo, this is definitely one kalabasa recipe that you wouldn’t sa no. I just added shrimp paste to make it more flavorful. Some may also use kamote leaves instead of malunggay. So it’s up to you.

As always, I am not really a fan of using instant mixes and flavorings. But if you want to add, you definitely can.
