Small Shrimps Fritters (Tortang Alamang)

Tortang Alamang

Here’s one torta recipe that you’ve surely missed. Shrimp fry or small shrimps is not available all-year round, it’s seasonal. So the moment that you see one in the market, buy it. And make them into a delicious and crispy tortang alamang and get your vinegar dip ready!

Here’s how to cook Small Shrimp Fritters (Tortang Alamang):

Ingredients:

3 cups Shrimp Fry (Alamang)
1 medium sized Carrot (shredded)
3 cloves Garlic (shredded)
1 large sized Red Onion (shredded)
1/2 cup Green Onions (chopped)
1 tsp. Ginger Extract
3/4 cup All-purpose Flour
2 tbsp. Cornstarch
2 Eggs
Salt
Pepper
Cooking Oil

Dip: Pinakurat or Vinegar with Garlic

Process:

  1. Combine in a bowl all the ingredients. Shrimp fry, carrots, garlic, onion and ginger extract. Mix them a bit. Then add in the all-purpose flour, cornstarch and eggs. Mix them evenly. Season with salt and pepper.
  2. Heat some cooking oil in a pan. Scoop some of the mixture, form them into disc and fry on both sides until brown.
  3. Use paper towel to remove excess oil.

Serve while hot!
